Pure vanilla magic
This phenomenon appears only in the highest quality premium vanilla beans that have developed a rich concentration of natural vanillin. It happens exclusively when high grade beans undergo a lengthy and labour intensive curing process and are then given additional time for the natural chemistry within the pod to do its work. When done correctly, the result is vanilla bursting with aroma, flavour and vanillin.
This photo of our vanilla stock was taken last winter, when the cold temperatures in our warehouse encouraged the natural vanillin crystals to form on the pods. As the beans warm up, these crystals melt back into the pod. This is confirmation that the white speckling is not mould, but a hallmark of exceptionally high quality vanilla.
